The Fullerton’s inaugural World’s Best Chefs will launch in May featuring Chef Francis Mallmann, Argentinian celebrity chef and grill master specialising in Patagonian methods of open-fire cooking.
After building his career on fine dining French cuisine, Francis Mallmann returned to his roots in the mid ’90s, learning local techniques from his childhood home of Patagonia and bringing them to the high end food scene. At its core, his culinary philosophy distils down to primal, one-syllable words: smoke, fire, air, stone, salt, rain, meat, wine.
Featured on numerous international television programmes, including the Netflix original series Chef’s Table, Francis Mallmann’s influence has grown almost in direct proportion to his desire to distance himself from the culinary upper crust. Today, he spends most of his time in Patagonia, while running his 10 restaurants across South America, France and the USA.
In Singapore, Francis Mallmann will showcase his mastery of open-fire cooking techniques with seven exclusive dinners at The Clifford Pier. The six-course dinner menu will feature dishes cooked in an open-fire dome barbecue pit, specially constructed at The Clifford Pier’s alfresco area.
